Our Team
Our team is headed up by Wesley Hammond with Anthony Theobald in a supporting position.
Wesley joined the company in 2005 as Head Chef at The Old Post Office, in St Fagans. Originally from
Saundersfoot, Pembrokeshire, he has also worked for Neil Morrisey at Hurst House, Laugharne in Carmarthenshire.
His biggest influences are Aidan Bryn, The Galvin Brothers and Mark Askew. His own taste in food
includes Japanese, classic French and modern British. Wesley is a keen forager, and spends his time off
shooting for game and fishing.
